Ingredients

Crust
  • 3/4 cup graham cracker crumbs about 75 g, or crushed oat biscuits
  • 1 1/2 tbsp butter melted
Filling
  • 2 cups 2% cottage cheese about 450 g, room temperature
  • 4 oz light cream cheese about 115 g, room temperature
  • 1 cup plain nonfat Greek yogurt about 225 g, thick
  • 2 scoops vanilla whey protein powder about 60 g
  • 3 large eggs room temperature
  • 1/3 cup granulated sweetener or sugar
  • 2 tbsp cornstarch
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice plus the zest of 1 lemon
To serve (optional)
  • 2 cups fresh berries or other fruit

Method

  1. Heat the oven to 350°F (175°C). Line the bottom of an 8-inch springform pan with parchment paper.
  2. Mix the graham cracker crumbs with the melted butter and press firmly into the bottom of the pan. Bake for 8 minutes, then let it cool slightly.
  3. Blend the cottage cheese in a blender or food processor for 1–2 minutes, until completely smooth with no curds left.
  4. Add the cream cheese, Greek yogurt, protein powder, sweetener, cornstarch, vanilla, lemon juice and zest, and blend until smooth. Add the eggs and blend briefly, just until combined.
  5. Pour the filling over the crust and bake for 40–45 minutes, until the top is deep golden, the edges are set and the center still jiggles slightly. For a darker top, broil for 1–2 minutes at the end, watching closely.
  6. Turn off the oven, open the door slightly and leave the cheesecake inside for 30 minutes. Then let it cool to room temperature and refrigerate for at least 6 hours, or overnight.
  7. Cut into 8 slices and serve with fresh fruit if you like.

Notes

Nutrition is calculated with a zero-calorie sweetener and without fruit. Using sugar adds about 32 kcal per slice.
Blend the cottage cheese well: any curds left will show in the texture.
