Ingredients

Chicken and green beans
  • 1 1/2 lb boneless skinless chicken breast 680 g, cut into 1-inch pieces
  • 1 tbsp cornstarch
  • 1 tbsp low-sodium soy sauce for the chicken
  • 1 tbsp neutral oil
  • 1 lb green beans 450 g, trimmed
  • 1 tbsp sesame seeds white and black, for topping
  • 2 green onions sliced
Garlic sesame sauce
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp creamy peanut butter
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha or more to taste
  • 4 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp water

Method

  1. Toss the chicken pieces with the cornstarch and 1 tbsp soy sauce. Let them sit while you prepare the rest.
  2. Whisk all the sauce ingredients together in a small bowl until the peanut butter is smooth.
  3. Heat a large skillet over medium-high heat. Add the green beans and 3–4 tbsp water, cover and steam for 3 minutes. Uncover, let the water evaporate and cook 1–2 minutes more until lightly blistered. Transfer to a plate.
  4. Add the oil to the same skillet. Add the chicken in a single layer and cook for 5–6 minutes, turning once, until golden and cooked through (165°F / 74°C).
  5. Lower the heat to medium, pour in the sauce and stir for 1–2 minutes until it thickens and coats the chicken.
  6. Return the green beans to the pan and toss everything together. Top with sesame seeds and green onions and serve as is or with rice.

Notes

Tender chicken: the cornstarch coating (velveting) keeps chicken breast juicy and helps the sauce stick.
Nutrition is without rice. Add about 100 kcal per ½ cup of cooked rice.
