Ingredients

  • 1/2 cup old-fashioned rolled oats 40 g
  • 1/2 cup plain nonfat Greek yogurt 120 g
  • 1/2 cup milk skim, 2%, soy or protein milk
  • 1/2 scoop vanilla protein powder about 15 g
  • 1 tbsp chia seeds
  • 1 tsp maple syrup optional
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 1/2 cup fresh or frozen raspberries plus more for topping

Method

  1. Add the oats, Greek yogurt, milk, protein powder, chia seeds, maple syrup, vanilla and salt to a jar or container.
  2. Stir very well until there are no dry pockets of protein powder left.
  3. Gently fold in the raspberries, or layer them on top.
  4. Cover and refrigerate for at least 4 hours, or overnight.
  5. In the morning, stir, add a splash of milk if it’s too thick, and top with fresh raspberries.

Notes

No protein powder? Use ¾ cup Greek yogurt and ¼ cup milk instead. You’ll get about 24–26 g of protein.
Meal prep: keeps up to 4 days in the fridge. Add crunchy toppings the day you eat it.
