Ingredients

  • 1 cup old-fashioned rolled oats about 90 g
  • 1/2 cup natural creamy peanut butter about 128 g, or cashew butter
  • 2 scoops vanilla whey protein powder about 60 g
  • 3 tbsp honey or maple syrup
  • 2–3 tbsp milk as needed
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/4 cup mini dark chocolate chips about 45 g

Method

  1. Blend the rolled oats in a blender or food processor for 30–60 seconds, until they turn into a fine flour.
  2. In a bowl, mix the peanut butter, honey, vanilla and salt until smooth.
  3. Add the oat flour and protein powder and stir until combined. Add milk 1 tablespoon at a time until the dough holds together when pressed, like soft cookie dough.
  4. Fold in the mini chocolate chips.
  5. Chill the dough for 15–20 minutes if it feels sticky, then roll into 12 balls of about 1¼ inches, using a small cookie scoop or about 1½ tbsp of dough each.
  6. Refrigerate in an airtight container for at least 20 minutes before eating.

Notes

Texture: too sticky, add a little oat flour or protein; too dry, add milk 1 tsp at a time.
Storage: fridge up to 1 week, freezer up to 3 months.
